Equipment

  • Heavy-bottomed saucepan
  • Thermometer
  • Whisk
  • Large glass container
  • Cheesecloth
  • Fine-mesh strainer
  • Large bowl

Ingredients

  • 1 quart 4 cups whole milk (or 2% for a lighter version)
  • 2 tablespoons plain yogurt with active cultures as a starter
  • 1/4 cup powdered milk for extra thickness (Optional)

Instructions

  • Heating the Milk for Greek Yogurt
A heavy-bottomed saucepan on the stove with whole milk simmering. A thermometer shows the temperature, while a person gently stirs the milk with a whisk. Steam is rising from the surface.
  • Cooling the Milk to 110°F
A saucepan with milk cooling in an ice bath. A hand gently stirs the milk while a thermometer shows the temperature decreasing towards 110°F. Condensation forms on the pan.
  • Incorporating the Yogurt Starter
A close-up of a small bowl with yogurt starter being whisked into cooled milk. The hand-held whisk is blending the starter into the smooth milk.
  • Incubating the Yogurt
A glass container filled with warm milk and yogurt starter, wrapped in a towel for insulation. It is placed on a kitchen countertop in soft, dim lighting, creating a warm environment for fermentation.
  • Straining the Greek Yogurt
Thick, creamy yogurt being poured into a cheesecloth-lined fine-mesh strainer over a bowl. The yogurt is straining as whey drips into the bowl below.

Notes

  • Use fresh, high-quality milk for the best results.
  • Ensure all utensils are clean to avoid contamination.
  • Let the yogurt incubate longer for a tangier taste.
  • Save some yogurt to use as a starter for your next batch.
  • Use strained whey in smoothies, soups, or baking instead of discarding it.
