Preparing the Batter: In a large bowl, whisk together flour, baking powder, salt, and sugar.
In a separate bowl, beat the eggs, then mix in milk, vegetable oil, vanilla extract, and almond extract (if using).
Combine wet and dry ingredients, whisking until just mixed. Some small lumps are okay.
Let batter rest for 5-10 minutes while you preheat the waffle iron.
Cooking the Bubble Waffles: Preheat the bubble waffle maker according to the manufacturer’s instructions.
Lightly coat the waffle iron with cooking spray.
Pour about 3/4 cup of batter onto the center of the waffle iron and close the lid.
Cook for 3-5 minutes until golden brown and crispy.
