Ingredients

  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • ½ lb large shrimp peeled and deveined
  • 2 tablespoons olive oil divided
  • 1 onion diced
  • 2 bell peppers mixed colors, sliced
  • 3 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes optional
  • Salt and freshly ground black pepper to taste
  • ¼ cup fresh parsley chopped
  • Lemon wedges for serving

Instructions
 

  • Season the chicken: In a bowl, season the chicken pieces with salt, pepper, and half of the paprika.

  • Prepare the shrimp: In a separate bowl, season the shrimp with salt and pepper.

  • Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for 5-6 minutes until golden brown. Remove and set aside.

  • Cook the shrimp: In the same skillet, add the shrimp and cook for 2-3 minutes until pink. Remove and set aside with the chicken.

  • Sauté the vegetables: Add the remaining olive oil to the skillet. Sauté the onions and bell peppers for 3-4 minutes until softened.

  • Add garlic and sauce ingredients: Add minced garlic and cook for 30 seconds until fragrant. Stir in the diced tomatoes, chicken broth, remaining paprika, oregano, and red pepper flakes. Simmer for 5 minutes.

  • Return chicken and shrimp: Return the cooked chicken and shrimp to the skillet. Simmer for an additional 5 minutes or until the chicken is cooked through and the shrimp is heated.

  • Finish and serve: Sprinkle with fresh parsley and serve with lemon wedges. Enjoy!

Notes
