Ingredients

  • 1 tablespoon baking powder

  • 2 large eggs
  • 1/4 cup vegetable oil

  • 1 tablespoon dried herbs dill, chives, or a mixture

Instructions
 

Preparing the Dough:

  • In a large bowl, whisk together flour, baking powder, and salt.
  • In another bowl, mix sugar, cottage cheese, eggs, vegetable oil, and milk until well combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  • Fold in the dried herbs and Parmesan cheese (if using).
  • Let the dough rest for 10 minutes.

Shaping and Rising:

  • Grease a 9x5 inch loaf pan with butter or cooking spray.
  • Transfer the dough to the prepared pan and smooth the top with a spatula.
  • Cover with a kitchen towel and let rise for about 1 hour in a warm, draft-free place.

Baking the Bread:

  • Preheat the oven to 350°F (175°C).
  • Bake the bread for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
