Preparing the Dough: In a large bowl, whisk together flour, baking powder, and salt.
In another bowl, mix sugar, cottage cheese, eggs, vegetable oil, and milk until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
Fold in the dried herbs and Parmesan cheese (if using).
Let the dough rest for 10 minutes.
Shaping and Rising: Grease a 9x5 inch loaf pan with butter or cooking spray.
Transfer the dough to the prepared pan and smooth the top with a spatula.
Cover with a kitchen towel and let rise for about 1 hour in a warm, draft-free place.
Baking the Bread: Preheat the oven to 350°F (175°C).
Bake the bread for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and cool in the pan for 10 minutes.
Transfer to a wire rack to cool completely before slicing.
For a lighter texture, use small curd cottage cheese or blend the cottage cheese before adding.
Don’t overmix the dough to avoid a tough texture.
Adjust the dough consistency by adding more milk if necessary.
